Laurie’s Broccoli & Cheese Bake


This is a broccoli-only version of the recipe on the previous page. In this version, the broccoli is not cooked before baking and, as a result, is still a bit crispy (instead of mushy). 

For this recipe you will need:

2 bags of frozen broccoli, family sized

1 can cream soup (mushroom, celery or chicken)

11/2 c sharp cheddar cheese

1/2 c mayonnaise

2 eggs, beaten

1 stick butter

1 box Cheez-Its

Crumble an entire box of Cheez-Its (cheese crackers); this is most easily done in a food processor. Measure out one cup, and set the rest aside for the topping.

Melt butter. Beat eggs.

Mix together all the ingredients except the reserved crumbs.  Spread evenly in a greased 9”x13” baking pan.  Sprinkle the remaining crumbled Cheez-Its on top. 

Bake at 350ºF for one hour.
